Can you believe it is that time of year again! It feels like I was just pulling out the recipe books for cookie baking, unpacking my favorite holiday mugs, and putting together a basket of Christmas stories to read by the fire. Yet here we are again…my favorite time of year! And thanks to New England Coffee I have some fun surprises in store. Just keep on reading for a tasty cookie recipe using their Mint Mocha coffee plus an AMAZING giveaway!

Just in time for the holidays, New England Coffee has released three seasonal flavors! Eggnog, Gingerbread, and Mint Mocha (used in the recipe below!) All three flavors are available in 11 oz bags at your local grocery store and the New England Coffee Shop at www.newenglandcoffee.com
This year I plan on celebrating the holidays by embracing all our favorite family traditions. I’ll also be sure to have a cup of freshly brewed New England Coffee near by while making new traditions with the extraordinary people in my life! The Eggnog coffee was a favorite especially while curled up in front of the fire reading Christmas stories. And if you are looking for a new family favorite cookie recipe then be sure to pick up a bag of New England Coffee Mint Mocha to use in these Spritz cookies!
Mint Mocha Spritz Cookies (makes about 2 dozen)
For the cookies:
1 stick softened butter
1/2 cup sugar
1 egg
1/4 tsp vanilla extract
3/4 tsp almond extract
1/2 tsp salt
1 1/4 cups flour
Preheat oven to 400 degrees. Using a stand mixer, beat together the butter, sugar, egg, vanilla and almond extract. Beat it for about 3-4 minutes; you want it to be light and fluffy. Add flour and salt and mix together on low speed until well combined.
Fill your cookie press with the dough and attach whatever disk you want to use to shape your cookies (refer to your cookie press instructions.) Use your press to shape the dough onto your parchment lined cookie sheet leaving about 1″ between each cookie.
Bake until set and just starting to turn golden around the edges, about 6-7 minutes. Let cool completely!
For the Mint Mocha Glaze:
– 1 cup semisweet chocolate chips
– 1 tsp shortening
-1 tsp corn syrup
-1 cup powdered sugar
-5 TBSP brewed New England Coffee Mint Mocha coffee
-3 candy canes, crushed
In a microwave safe bowl melt together the chocolate chips, shortening and corn syrup (about 1 minute). Stir in the powdered sugar and coffee.
Dip half of the Spritz cookies into the glaze. Put back on your parchment lined cookie sheet to set up, but before they completely harden make sure you sprinkle with your crushed candy canes!
