I am a couple months into using the My Hannaford Rewards and it has been fun seeing my earnings continue to grow! So far my favorite part of program is the fact that I’m saving on items I’ve already been purchasing for years. Between the personalized coupons that continue to pop up each week and earning a 2% reward on store brand items I have saved on every single shopping trip since joining! And my savings add up especially when purchasing Hannaford brand ingredients for my Layered Lemon Delight bars.

The app is so easy to use that I find myself quickly looking through the available coupons before going through checkout and with a touch of a button, clipping the ones I need for that shopping trip. And there are some trips where I’m simply grabbing a few necessities and since most of these items are a Hannaford store brand, I’m automatically earning the 2% reward on those items! Plus with no additional store card to carry or physical coupons to clip I’m remembering to save each trip by entering my phone number or scanning my app barcode at checkout.
Now onto the recipe! Like I said, most of the ingredients in these Layered Lemon Delight bars can be found by Hannaford brand, which means you will be earning the 2% reward. These simple ingredients, when combined in the easiest way, turns into a delightful bar which can be served for any Spring or Summer gathering! This recipe makes a 9×9, but double the ingredients and you’ll have a 9×13…perfect for savoring and sharing!
The first layer of these lemon bars is a simple cookie layer with two basic ingredients: unsalted butter and flour. Using a pastry blender (or two forks or even your fingers) cut the chilled butter into the flour until crumbs form. Then press into the bottom of an ungreased 9×9 and bake at 350 for 18-20 minutes until set. Let cool completely while you complete the next layers.
The lemon layer is exactly like that found in a lemon meringue pie. Follow the instructions on the box of stovetop pie filling. For the brand I’m using I combined the box of pie filling, 1/2 cup granulated sugar, 2 egg yolks and 2 1/4 cups water. Stir together and cook over medium heat until it comes to a boil, stirring constantly. The filling will thicken right before your eyes! Let cool completely.
The rest of the layers feature homemade whipped cream. To make, use an electric hand mixer to beat together 1 cup heavy whipping cream with 2 TBSP confectioners sugar and 1 tsp vanilla extract. In a separate bowl beat together 4 oz. cream cheese at room temperature with 1/2 cup confectioners sugar. Gently fold in about 1/2 cup of the whipped cream into the cream cheese mixture. Now, on to the layering!
On top of the cooled cookie layer dollop the cream cheese mixture. Spread evenly with an offset spatula. Next spread the cooled lemon pie filling on top of the cream cheese layer. Finally top with the rest of your whipped cream! Refrigerate for at least 2 hours. Slice and serve chilled!
Layered Lemon Delight bars
Ingredients
- 1 cup flour
- 1/2 cup cold butter cut into pieces
- 1 box stove top lemon pie filling made according to package directions (my box called for 2 egg yolks, 1/2 cup granulated sugar, 2 1/4 cups water)
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- 1/2 cup confectioners sugar plus an additional 2 TBSP to use for whipped cream
- 4 oz cream cheese at room temperature
Instructions

Preheat oven to 350. Cut 1/2 cup butter (1 stick) into the 1 cup of flour until fine crumbs. Press into a 9×9 ungreased glass pan. Bake for 18-20 minutes until set. Let cool completely.

With an electric handheld beater, beat together 1 cup heavy cream, 2 TBSP confectioners sugar and vanilla extract. Beat until stiff peaks form.

With your handheld beater, beat together 4 oz (1/2 block) of cream cheese at room temperature with the 1/2 cup confectioners sugar. Carefully fold a generous 1/2 cup of your whipped cream into the cream cheese mixture. Set aside.

On top of the cooled cookie layer dollop the cream cheese mixture. Spread evenly with an offset spatula. Next spread the cooled lemon pie filling on top of the cream cheese layer. Finally top with the rest of your whipped cream! Refrigerate for at least 2 hours. Slice and serve chilled! Store any extra covered and in the refrigerator. Can double to make a 9×13!
