St. Patricks Day is right around the corner and being a little Irish (I’m pretty sure I have some Irish mixed in with a bunch of other things) I need a way to celebrate so sugar cookies anyone? Ok, like I really need a reason to bake my boys sugar cookies. These sparkly gems are just perfect for St. Patricks Day! Plus you can change the sprinkle color to coordinate with any season or any event!
These sugar cookies really are easy to make and I make them all throughout the year. A couple weeks ago I made them with pink and red sparkling sugar for Valentines Day! They have a little crisp to the edges but are also perfectly chewy. The coarse sugar on top is all sparkly and adds the perfect sugary crunch.
The other thing I love about this recipe is that there is no chill time required for the dough! Literally within 30 minutes of starting this recipe you will have a batch of sugar cookies coming out of the oven. So pour yourself a glass of milk and enjoy!
- 1 stick butter (1/2 cup)
- 1 1/2 cups sugar
- 1 egg
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/4 cup sour cream
- Sparkling sugar of your choice
- Preheat oven to 350 degrees.
- In the bowl of an electric mixer (or you can use a hand mixer for this soft dough), beat together the butter and sugar until light and fluffy, about 2 minutes. Add the egg and vanilla and beat until combined.
- Add the flour, powder, salt, soda & sour cream and beat until well mixed.
- Drop 1 1/2 T mounds about 2-3" apart on a baking sheet lined with parchment paper. Dip the bottom of a glass in water and press each ball of dough until flattened. Sprinkle with as much sparkling sugar as you would like!
- Bake for 9-10 minutes until just starting to brown on the edges.
- This is the perfect recipe to do using the convection setting on your oven!
