I just love key lime pie. Don’t you? Sweet and tart, creamy custard and crunchy crust, cool and refreshing. And it is so easy to make taking only 5 ingredient!
The other thing I love about this recipe is that it uses egg yolks…which means I’ll have egg whites left over to make some of my favorite cookies! Swiss Meringues! (click for recipe)
This recipe was given to me by a sweet, dear family friend, Linda C. She makes some of the best recipes and is one of those ladies (yes, she is one of the few true ladies I know) who will happily share any recipe! If you are a key lime lover then you simply must make her recipe!
- 1 pre-baked graham cracker pie crust (homemade or store bought)
- 4 egg yolks
- 1 - 14 oz can sweetened condensed milk
- 2 tsp lime zest
- 1/2 cup key lime juice
- Preheat oven to 350 degrees.
- In a large mixing bowl beat egg yolks with a mixer until thickened and light yellow (about 2-3 minutes)
- Add the sweetened condensed milk, lime zest, and key lime juice and beat on low until just combined. Do not over mix.
- Pour into your pre-baked pie crust and bake at 350 degrees for 12 minutes or until just set.
- Let cool completely before serving and store in fridge.
- Please oh please try to use key lime juice. I don’t suggest juicing your own key limes as they are so small and take forever to get enough juice. You can buy bottles of key lime juice in the juice aisle.
- I always serve my key lime pie cold and it can be garnished with dollops of whipped cream and lime wedges.
- You can freeze the leftover egg whites and use them for other recipes another time.
