This is a favorite recipe in our family. It’s simplest enough to whip up with the kids and you most likely have the ingredients in your pantry. Perfect for school lunches or a quick breakfast as they are ready in 20 minutes start to finish!
Mini Chocolate Chip Muffins with Mini Chocolate Chips
Ingredients
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 3/4 cup mini chocolate chips
- coarse sugar
Instructions

Preheat your oven to 400

Whisk together your dry ingredients. Add the milk, vegetable oil and egg and mix only until just combined. Stir in the mini chocolate chips.

Spray your mini muffin pan and using a small cookie scoop evenly divide your batter in 24 muffin cups.

Sprinkle the tops with coarse sugar and bake for 13-14 minutes until golden brown.
