I’m not a big breakfast person (I know I know, most important meal of the day). However, if you put a muffin, croissant, scone, bagel or piece of coffee cake in front of me then suddenly I’m in the mood for breakfast! Add some extra streusel like in my Streusel Buttermilk Coffee Cake recipe and I’m all in!
I recently sent a plateful of these in with my husband to his work. They were a hit! I especially love this recipe and will make it in a pinch because the ingredients are pantry staples. However I must warn you, this recipe involves a lot of butter! But who’s complaining 🙂
The cake part is moist because of the buttermilk and has extra vanilla for a delicious vanilla flavor. I would say there is just about equal parts of the buttery, cinnamon streusel. Add a dusting of powdered sugar right before serving and oh yum!
- 1/2 cup buttermilk
- 2 Tbsp canola oil
- 1 egg
- 2 tsp vanilla extract
- 1 1/2 cups flour
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 1/2 cups flour
- 1 cup dark brown sugar (I used organic brown sugar, which tends to be darker)
- 2 tsp cinnamon
- 1 tsp vanilla
- 2 sticks (1 cup) unsalted butter, melted and cooled
- powdered sugar for dusting
- Combine buttermilk, oil, egg and vanilla and mix until well combined.
- Add the dry ingredients and stir until combined and there are no lumps. But don't over mix!
- Spray a 8x8 baking dish (I use coconut oil spray).
- Pour batter into dish and set aside to make the streusel.
- In a mixing bowl stir together flour, brown sugar, cinnamon and vanilla. Add the melted butter and work into the dry ingredients until clumps form.
- Top the cake using large pinches of streusel; grab a clump of the streusel, pinch together, and put on batter until all the cake batter is covered (see pictures above).
- Bake at 350 degrees for 30 minutes until a cake tester comes out clean.
- Let cool and sprinkle with powdered sugar before serving!
