My dad loves food. Yes, all guys like food but my dad like loves food. And he is probably the least picky eater of anyone in the family (unfortunately my hubby and I have complete opposite taste buds). However, I’ve got to crack up as when it comes to this Summertime Strawberry Salad with Poppy Seed Dressing…dad says leave this one for the ladies!
He really is right, this is the perfect light, refreshing summertime salad. Eat by itself for a satisfying lunch or pair with a quiche (try my Ham and Asparagus Quiche) for a perfect summertime dinner. I’m not quite sure where the recipe originally came from, all I know is that it was served at a ladies luncheon…and with how easy it is to whip together, I’m sure it will be served at your next luncheon!
I used a base of baby greens for the salad. You could also use spinach. I then topped the salad with the following:
- strawberries
- mandarin oranges
- toasted walnuts
- sliced radishes
- shaved Parmesan cheese
Those were my salad topping choices but really the possibilities are endless! Think Blue Cheese or Gorgonzola, blueberries or pineapple, cucumbers, carrots, cherry tomatoes, red onions. Pick toppings that are in season from your local Farmers Market or ingredients already in your refrigerator!
And like I said, this recipe is so fast and easy to whip up. Grab a cute mason jar, measure in the dressing ingredients, shake and serve!
- 1 cup canola oil (or any other type of light oil)
- 1/3 cup red wine vinegar
- 1/2 cup sugar
- 1 T poppy seeds
- 1 tsp salt
- 1 tsp dry mustard
- 1/4 tsp paprika
- Combine all ingredients in a mason jar, secure lid and shake well. Shake again before serving. Store leftover dressing in refrigerator.
