Here in New England you can tell we are fully submerged in all things fall when everywhere you turn is apple, pumpkin & maple! Every farm stand you drive by has wooden crates brimming with pumpkins and apples. And mornings are now filled with steaming cups of coffee, fluffy slippers, and warm baked goods. And this recipe for Apple Bran Muffins is so moist and simple to make it will be a staple in your recipe box!
But before I get to the recipe let’s talk about those cozy fall mornings. For years now, Hunter and I have had a morning tradition of coffee and maple milk time. We usually have matching mugs and I pour myself coffee and make him a mug of maple milk. So I’m sure you can guess our excitement when Oakhurst Dairy came out with their own maple milk this month! Actually Hunter’s exact words were, “oh my word! You have got to be kidding me!”
Now being a born and raised New Englander you had better believe my first question was is it real maple syrup or maple flavor (because there is a HUGE difference). But of course it being created by Oakhurst Dairy, the Maple Milk is indeed made with pure Grade A maple syrup. And since I’m raising a real little New England boy over here, Hunter’s next question was “with real maple syrup? Like from the trees with the buckets?” Yes Hunter, because Oakhurst understands how we do things here up here in NH and Maine.

Apple Bran Muffins
Ingredients
- 1 1/4 cup flour
- 1 cup oat bran
- 1/2 cup sugar
- 1 Tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup applesauce
- 1/4 cup Oakhurst milk
- 1/4 cup oil
- 1 egg
- Cinnamon sugar for top
Instructions

Preheat oven to 400

Mix together all your dry ingredients (that way you don't end up with pockets of baking powder or cinnamon). Add your applesauce, milk, oil and egg. Using a wooden spoon stir it all up until it's all combined. Just make sure you don't over mix or you will have tough muffins!

Scoop into prepared muffin tin (sprayed with cooking spray or lined with pretty little liners). Sprinkle each muffin with cinnamon sugar and bake at 400 for 17-19 minutes. Muffins will be golden brown and a cake tester will come out clean!
