Things the McCoy family loves: lazy summer mornings, blueberries, and cereal! It’s no joke when I say we love our cereal, and we’ve been known to consume our fair share, (morning and night!) which is why we were so excited to try NEW Blueberry Cheerios available now at your local Walmart.
I think for me it started when I was a young girl visiting my grandma’s house. My grandparents lived far enough away that we probably only saw them once a month growing up. I remember that when it would come time to leave, my grandma would open her lower cabinet (I can so see it like it was yesterday! The cabinet was under her wall oven…) and pull out special little boxes of cereal for my brother and me! They were these little boxes of cereal that my parents would have never splurged on for us kids. But Grandma and Grandpa? Well their job after all is to spoil their grandkids! We’d each get to pick a box with the understanding that we had to obey mom and dad and get in the car like good little children. As soon as we were buckled in with hugs and kisses given, we were allowed to start munching!
Fast forward 25 years, and now my mom is a grandma, (we call her Nana) and she has continued the tradition of giving the boys little baggies of cereal before the drive home. The funny thing is, our drive home is less than 3 minutes! But the boys know that Nana will never say no to a “baggy of cereal please!” I’ve numerous times responded “seriously boys? You just ate!” To which my mom will respond, “but they are growing boys! Nana’s got it boys. Don’t you worry.” And who can argue with Nana.
Cereal really is a staple in our family, and we are always stocking up on it at Walmart (like the NEW Blueberry Cheerios!) I grew up having it as a bedtime snack so of course my boys have made sure it’s an option for them, too. And many mornings during the school year I pack little bags for the boys for the car ride to school. But now that summer is here, we can have lazy mornings around the table, staying in our pjs for way too long!
This past week, on a hot summer morning, the boys gathered around the harvest table with little bed heads and summertime pjs. We all poured bowls of Blueberry Cheerios Cereal and ate homemade blueberry muffins and fresh blueberries; because quite frankly you can never have too many blueberries when they are in season! Soon we will be over at my dad’s garden picking our share of his home grown blueberries. And you better believe little bags of cereal will be handed out for our drive home.
Blueberry Cheerios are the newest addition to the Cheerios family! Made with real blueberry puree, it will become a summer staple. Be sure to head to your local Walmart to pick up a box.
Blueberry Muffin Recipe:
1/3 cup sugar
1/4 cup butter softened
1 egg
1 teaspoon vanilla
2 1/3 cup flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup whole milk
1 1/2 cup fresh blueberries
Streusel topping:
1/2 cup sugar
1/3 cup flour
1 tsp cinnamon
1/4 cup cold butter, cut into pieces
1/2 cup chopped walnuts
Cream together the sugar and butter until fluffy. Add the egg and vanilla and mix until well combined. In a separate bowl mix together the flour, baking powder and salt and then carefully add to your creamed mixture. Mix until it just comes together…you don’t want to over mix! At this point you’ll want to gently fold in your blueberries (careful or you’ll squish them!)
To make the streusel topping, mix the sugar, flour and cinnamon in a small bowl. Cut in the cold butter until it resembles pea size pieces. Stir in your chopped walnuts if desired.
Line a muffin tin with cupcake liners and evenly divide your batter among 12 tins. Sprinkle your streusel topping on each muffin. Bake at 375 for 22-25 minutes until a toothpick comes out clean.
