I’m baking up a storm this week in preparation for Thanksgiving! I often reference my own blog when finding recipes I often make as I love sharing family favorites with you all. That’s when I realized I never shared our family’s Pumpkin Bread recipe! I make it using homemade pumpkin puree (it’s actually super easy) but you can use a can of pumpkin too. Just make sure you buy pumpkin puree and not pumpkin pie filling.
Family Favorite Pumpkin Bread
Ingredients
- 1 1/2 cups sugar
- 1/2 cup oil
- 2 cups pumpkin puree
- 1 2/3 cup flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 3/4 tsp salt
- 1/2 cup chopped walnuts optional

Preheat your oven to 350.

In your mixing bowl stir together the sugar, oil, eggs and pumpkin. In another bowl, whisk together all the dry ingredients. You can also sift them together but I find a whisk works just as well! Combine the wet and dry ingredients and mix until just combined. If you over mix you'll end up with tough pumpkin bread! At this point you can stir in your walnuts if you are nut in bread fan!

Spray your pans with cooking spray. This recipe will make 3 mini loaves or 1 large loaf (I also love to make this is a pretty pumpkin pan (https://rstyle.me/+e-yhje65mPjgm7XqIrNyyw). Evenly divid the batter in your pans. Bake at 350 for 45-50 minutes for the small pans or 55-65 minutes for the large pan!
