On the fifth day of Christmas my darling baked for me Flourless Chewy Chocolate Chunk Cookies.
Those of you who have been following along for a couple years know I’ve actually already posted about these Flourless Chocolate Chunk cookies here. But they are too good, and gluten free, that I just had to include them in my 12 Days of Baking! Just make sure to double check that the powdered sugar you are using is indeed gluten free. You want it to be made with corn starch, not wheat starch as some on the market use!
- 3 cups powdered sugar (check to make sure it is gluten free)
- 3/4 cups unsweetened cocoa powder
- 1 tsp salt
- 2 egg whites
- 1 whole egg
- 2/3 cup chocolate chunks
- Preheat oven to 350 degrees
- Mix together all dry ingredients until well combined. Add the egg whites and whole egg and mix and mix and mix. Don't worry, all the dry ingredients will incorporate together just keep mixing.
- Once fully combined stir in the chocolate chunks.
- Drop by scant tablespoons 2" apart onto a parchment lined cookie sheet. I used my medium 2 tsp size cookie scoop.
- Bake for 11-12 minutes at 350 degreees until the cookies are set on the outside and still chewy on the inside.
- Let cool on the cookie sheet for about 2-3 minutes then transfer to a cooling rack to finish cooling. (Ha! We were devouring these after the 2 minute resting time!)
- While I do have a confection oven I didn't use it for these cookies. I just baked one tray at a time.
- If you need these cookies to be 100% gluten free make sure you check your bag of powdered sugar. You want your powdered sugar to be made with corn starch as some powdered sugars are made with a gluten starch.
