On the first day of baking my true love baked for me Molasses Spice Cookies.
Well the Christmas Cookie baking is in full swing in our home! And boy do I have some yummy treats in store for you! First up are these Molasses Spice Cookies…so chewy and full of cinnamon and nutmeg. Perfect for your plate of cookies for Santa. Plus they freeze well too so bake now and enjoy throughout the entire holiday season!
Molasses Spice Cookies

Ingredients
- 1 1/2 sticks softened butter
- 1 cup sugar
- 1 egg
- 1/4 cup molasses
- 2 cups flour
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg (freshly grated is best!)
- 1/2 tsp salt
- An additional 1/2 cup sugar for rolling dough
Instructions
- Preheat oven to 350. I've found that using the convection setting of your oven actually doesn't work the best for these cookies as you'll be baking 1 sheet at a time.
- In your stand mixer beat together the butter and 1 cup of sugar until light and fluffy, about 2-3 minutes. Add your egg and molasses and beat until it's all combined.
- In a separate bowl combine the dry ingredients (flour, baking soda, cinnamon, nutmeg & salt). Give it a good whisk. Dump it into your stand mixer and slowly mix until everything is all combined.
- Using your small cookie scoop (2 tsp size) drop your dough into a bowl of the additional sugar. Roll into tidy little balls and place on a parchment lined cookie sheet leaving about 2-3 inches between each ball.
- Baking just one sheet at a time, bake for 10-11 minutes until the whole cookie is set. They will kind of puff up in the oven but fall and crinkle once removed.
- Serve with milk for Santa or freeze!
Notes
- The dough will seem really soft. But if you use your cookie scoop and drop the dough right into your granulated sugar then it won't be too sticky for you! Don't refrigerate the dough though as they won't flatten and crinkle correctly!
