I am so excited to be partnering with Oakhurst to bring you our family favorite breakfast hack! With two growing boys (growing = never ending appetite), breakfast time can be a little crazy in our house. That’s why homemade waffles are a family favorite treat. Now I don’t know about you, but I sure don’t have time on a weekday morning to be whipping up a batch of fresh waffles. That’s why this recipe is perfect because it can be made ahead of time! But we’ll get to the waffles in a minute.
First a little bit about Oakhurst:
I think my husband may know the Oakhurst label a little better than any of us. I can’t begin to tell you the amount of times I’ve asked him to run out late at night to grab milk because I just discovered that I’m out of it for my morning coffee. He knows Oakhurst is a brand that can be trusted in our family. Oakhurst is a company that is committed to preserving natural resources right here in New England. They’ve been recognized as a leader in sustainability initiatives such as using solar panels at their headquarters, integrating hybrid delivery trucks, and by converting their entire fleet to biodiesel. Plus it’s local to us here in NH (we consider our next door neighbor Maine local around these parts!) and with our love of farms in this family we are so thankful Oakhurst is also committed to protecting Maine’s farming heritage.
Now about these waffles. Like I said, homemade breakfast and busy school mornings don’t exactly go hand in hand. Yes, I’m 100% guilty of tossing my boys a granola bar or breakfast pastry on the way out the door. But that isn’t necessarily fueling their day, is it? That’s why Oakhurst is encouraging families to start their day with a little goodness. Easier said than done unless you utilize some breakfast hacks! And one of our favorite hacks? Making our family’s homemade waffle recipe and freezing them so I can pop them in a toaster oven later in the week on a busy weekday morning. I know that when I hand my boys a little homemade goodness it’s a goodness that will last all day.
The boys love getting in on the baking action! Our freezer-friendly waffle recipe is so easy and requires basic kitchen pantry staples. Carter has definitely mastered cracking the eggs, and while little brother thinks he can accomplish that task as well, he is better off adding the Oakhurst milk.
This is the perfect recipe to be made over the weekend. We actually made them this past Sunday, and by doubling the recipe we were able to enjoy some fresh off the waffle iron. We cooled the rest and froze them for later this week. Make sure you fully cool them on a wire cooling rack then store in a freezer safe bag. Later you can pop them in the toaster and serve with REAL maple syrup!
Freezer Friendly Waffles
Ingredients
- 2 cups flour
- 1/2 tsp salt
- 4 tsp baking powder
- 1 T sugar
- 1 3/4 cup Oakhurst Whole milk
- 2 eggs - beaten
- 1/3 cup oil
Instructions
-
Put all the ingredients into a big bowl and whisk together. Leave the batter slightly lumpy.
-
Preheat your waffle iron. I do this step after I mix all my ingredients together as I find it gives the baking powder a chance to activate...which yields a fluffier waffle.
-
Grease your waffle iron well before putting on the first batch. Even if your waffle iron is "nonstick", still give it a light spray. Don’t overfill your waffle iron. This will lead to a big mess. I use my large ice cream scoop to fill each square of my iron.
-
Bake waffles according to your waffle iron instructions. I love crispy waffles but if I’m freezing them then I cook them until they are just lightly golden which is about 5 minutes for my iron. That way they don’t over bake when I put them in my toaster oven later.
Recipe Notes
To freeze: Let the waffles cool on a wire baking rack. Once cool, you can either throw them into a gallon freezer bag, a freezer safe container, or wrap first with plastic wrap then tin foil. They will freeze for about 2 months...if they last that long (never do in my house!) Just pop into a toaster for about 2-3 minutes and enjoy with real maple syrup and butter!
