There is something about May that makes my taste buds change. I go from craving hot lattes, comfort food, and spice filled desserts to wanting all things iced, grilled and citrus! So even though our weather has been dreary and looking a whole lot more like March instead of the month of Memorial Day, the boys and I decided to add some sunshine in our kitchen by making these Frosted Lemon Cookies.
When you bite into one of these moist, soft, sugar cookies be prepared for a burst of lemon flavor! These definitely feature lemon lemon lemon: lemon zest, lemon juice and lemon extract. Be sure to use bright yellow, large, juicy lemons for this recipe. Also, the frosting sets up perfectly so you can package these up in little cellophane bags for easy giving (teacher appreciation gifts anyone?)
Also, keep scrolling for a laugh. Not quite sure what my youngest was thinking by doing this…
Frosted Lemon Cookies
Ingredients
- zest of 2 lemons
- 3/4 cup sugar
- 1 cup unsalted butter softened
- 1 egg
- 1 tsp lemon extract
- 1/2 tsp vanilla extract
- 2 1/4 cups flour
- 1/2 tsp baking powder
- 1/2 tsp salt
For the frosting
- 1 cup powdered sugar
- 1/4 cup butter softened
- 1-2 TBSP lemon juice
Instructions

Preheat oven to 350 (that's the great thing about this recipe...no chill time!

Cream together the lemon zest, sugar and butter. Add the egg, lemon extract and vanilla extract and beat until combined. Slowly incorporated the flour, baking powder and salt.

Using a small 2 tsp cookie scoop, scoop the dough onto a parchment lined cookie sheets. You don't have to leave too much room as the cookies don't spread much (but habit always has me doing 12 cookies a sheet).

Use the palm of your hand to flatten each cookie before baking. Bake for 11-12 minutes or until just a hint of golden brown shows up around the edges...honestly, just a hint.

Let set for a few minutes on the cookie sheets before transferring to a wire rack to finish cooling.
For the Frosting:

With a hand mixer, beat together the powdered sugar, softened butter and just enough lemon juice until you get a spreadable frosting.

These cookies would be adorable decorated with some lemon sugar, yellow sparkling sugar or little white sprinkles...or just leave as is!
