My little man and I were sitting down for lunch when I asked him what he would like to do this afternoon. There is no doubt he is my child when his answer was BAKE! That’s my boy 🙂 My husband is trying not to eat too much gluten in his diet which made Christmas very hard for him. I was so proud of how few Christmas cookies he indulged in! So I knew I had to try to make him a gluten free cookie recipe.
Our favorite coffee shop in town sells these delightful chewy on the inside, crisp on the outside chocolate chunk cookies that are gluten free. So a quick Pinterest search and I found a recipe that I had to try. So my little man and I got on our aprons, pulled out the 6, yes only 6 ingredients and a bowl and wooden spoon. I absolutely love a recipe that requires no stand or electric mixer…makes clean up so much easier!
My three year old loves dumping and mixing the ingredients when baking. And you should hear his precious little sounds he make when dumping…he pretends he is a dump truck (all boy). So after tons of powdered sugar and cocoa powder all over my kitchen, we scooped out 30 of these chocolatety cookies. 12 minutes later we were in our glory. My poor husband. I think there are only half the cookies left!
- 3 cups powdered sugar (check to make sure it is gluten free)
- 3/4 cups unsweetened cocoa powder
- 1 tsp salt
- 2 egg whites
- 1 whole egg
- 2/3 cup chocolate chunks
- Preheat oven to 350 degrees
- Mix together all dry ingredients until well combined. Add the egg whites and whole egg and mix and mix and mix. Don't worry, all the dry ingredients will incorporate together just keep mixing.
- Once fully combined stir in the chocolate chunks.
- Drop by scant tablespoons 2" apart onto a parchment lined cookie sheet. I used my medium 2 tsp size cookie scoop.
- Bake for 11-12 minutes at 350 degreees until the cookies are set on the outside and still chewy on the inside.
- Let cool on the cookie sheet for about 2-3 minutes then transfer to a cooling rack to finish cooling. (Ha! We were devouring these after the 2 minute resting time!)
- While I do have a confection oven I didn't use it for these cookies. I just baked one tray at a time.
- If you need these cookies to be 100% gluten free make sure you check your bag of powdered sugar. You want your powdered sugar to be made with corn starch as some powdered sugars are made with a gluten starch.

I don’t see why not. If you have a Kitchenaid mixer I would probably use the dough hook to knead it as it is definitely a thick dough. Let me know if you end up making it in the oven and how it turned out! Happy baking
