Growing up mom would often make popovers on Sunday evenings or rainy days. I remember helping by getting out the wooden tray, seasonal napkins and small glass plates. She would serve them with honey and butter…I swear nothing is better than warm honey mixed with melting butter. (Except for the fact that the honey is now our own from our beehives!)
This recipe really is so simple. For my birthday my parents got me this mini popover pan. It makes the perfect ratio of crunchy outside to soft and fluffy inside. This recipe is specifically for the mini popover pan but can be easily adapted for a traditional popover pan by adjusting the cooking time from 20 minutes to 45 minutes. But who wants to wait 45 minutes for these yummy treats? (So go invest in the mini pan!)
Mini Popovers
Ingredients
- 2 eggs
- 1 cup milk
- 1 cup flour
- 1/2 tsp salt
Instructions

Generously spray your mini popover pan with cooking spray. Set aside. Do not preheat your oven.

Whisk together your simple 4 ingredients. Divide the batter evenly in your sprayed pan.

Place your popover pan in your cold oven. Close the door and turn on your oven to 450 degrees. In 20 minutes (or 45 if using a full size popover pan) you'll have steaming hot popovers! Serve with butter and honey.
