Our family favorite Whoopie Pie recipe that has become a staple for Thanksgiving dessert time.

Whoopie Pie Recipe

Ingredients:
2 cups flour
1 tsp soda
1 tsp salt
⅓ cup unsweetened cocoa powder
1 cup sugar
⅓ cup vegetable oil
1 egg
¾ cup milk
1 tsp vanilla
Filling:
1 stick softened butter
1 cup powdered sugar
3 TBSP marshmallow spread
½ tsp vanilla

Instructions:
Preheat oven to 350. Mix together dry ingredients. Add remaining ingredients and mix until combined. Spoonfuls on cookie sheet and bake 12 minutes....I used a small cookie scoop to get even whoopie pies and scooped onto parchment lined cookie sheets.
While the whoopie pies cool, beat together your filling ingredients. Once fully cooled, spread the filling between two cookie cakes to make a whoopie pie! To store, wrap each individually in plastic wrap to keep from drying out. Can also freeze!

Leek Potato Soup with Bacon

Ingredients:
3 medium leeks washed and cut into 1” slices
2 TBSP butter
1 medium carrot finely chopped
½ cup celery finely chopped
3 medium potatoes peeled and diced
1 TBSP flour
4 cUps chicken broth or stock
1 cup half and half
1 TBSP chopped parsley
Salt and pepper to taste
4 strips cooked & chopped bacon

Instructions:
In a medium dutch oven, sautee the leeks in butter for 2-4 minutes over medium heat. Add the carrots and celery and cook for 3-5 more minutes. Add potatoes and flour and cook for 3 minutes. Add the 4 cups of stock and bring to a boil for 5 minutes.
Cover your pot (make sure to tip the lid so it doesn’t simmer over) and simmer for 30 minutes stirring occasionally. After 30 minutes (make sure potatoes are nice and soft), add the half and half, parsley and salt and pepper to taste and simmer for an additional 15 minutes. 2 months with Emma Lynn (yet again a little late posting). Today we celebrated the life of my grandma, my mom’s mom. Grandma made it her dying wish to hold little Emma. So the night I got home from the hospital back in August we immediately went to see her and got our first 4 generation picture. Over the next 8 weeks I would pop in with little Emma to visit with my Grandma. And we were all there as she took her last breath, gave her final smile, and met Jesus face to face. The last picture is from last year on the basket swing that now hangs in Emma’s room.
