Fish and chips is a New England staple. If it is on a local menu when my husband and I are out for date night you had better believe it is what he is going to order! It’s so fun to see the different variations of the “chips” the local establishments match with the fish. Sometimes it’s a basic French fry, a house-made potato chip, or even potato wedges. Well when it came time to make my boys fish and chips I figured I’d include my favorite way to make potatoes: Parmesan Smashed Red Potatoes.
This was our first time trying Gorton’s New Crispy Battered Fish Fillets (found in your local grocers freezer department) and they did not disappoint. The boys downed the fish which means mama now has another go to meal I can keep right in my freezer! Oh and did I mention that with only 10 minutes prep time and less than 20 minutes in the oven everything is ready in under 30 minutes.

Now for the chips part of our fish and chips dinner I decided to make our family favorite Parmesan Smashed Red Potatoes. With only 5 ingredients, including salt and pepper, these are a quick and easy flavorful family go to recipe. The best part of this recipe though is that they cooks at the same temperature and in the same amount of time as the Gorton’s Seafood Crispy Battered Fish Fillets. I don’t know about you but I’m all for one pan dinners…less dishes, right?
Parmesan Smashed Red Potatoes: One Pan Fish and Chips with Gorton’s Seafood
Ingredients
- 12 small red potaotes
- 2 TBSP olive oil (more or less to taste)
- 1/2 cup fresh grated parmesan cheese
- salt and pepper to taste
Instructions

Place the red potatoes in a large pot and cover with cold water until water is at least an inch above the potatoes. You can add salt to the water if you wish. Bring pot to a boil and once boiling set a timer for 15 minutes. Once the timer is up test your potatoes with a sharp knife or fork. If they aren't quite tender enough (depending on the size of the potatoes) add a few more minutes of boiling.

Strain the potatoes and evening place on your cookie sheet covered with parchment paper (hello no mess!)

At this point you want to preheat your oven to 450 degrees.

Using a potato masher, smash each potato. This is a great step for children! If you don't have a potato masher you could also use a metal measuring cup or something else with a smooth hard base to get the job done.

Season the smashed potatoes with salt and pepper, drizzle the potatoes with olive oil, and evenly sprinkle the parmesan cheese (you can use more than the 1/2 cup if you want them extra crispy and cheesy!).

Add Gorton's Seafood Crispy Battered Fish Fillets to your pan and bake at 450 for 20 minutes. Serve hot and fresh out of the oven!
Recipe Notes
You could also mix in garden fresh herbs with the parmesan cheese for added flavor. Think chopped rosemary or minced oregano.
