It’s crazy to me that I’ve finally hit the age with my boys where we can have a family game night. Sure, little Hunter still needs some help here and there with picking the right card to beat his older brother, but for the most part game nights are definitely a thing in the McCoy home!
Being in a house of boys means all evening activities must include food. Well since mama would like to be included in the play that means snack food it is! But the same old choices can get boring after a few weeks. Which is why we are always game for trying new things! So when I was at my local grocery store knowing we were going to have family game night tonight I grabbed a bag of McCain Dip’n Wedges. I quickly read the package and came up with a quick Ranch Loaded Potato Skillet Dip I could whip up in no time.
I’m not joking when I say you can whip up this dip in no time. And since most of the time spent making this dip is actually baking time I was able to mix up two additional cold dips to compliment the steaming hot Ranch Loaded Potato Skillet Dip. Plus with how cool these McCain Dip’n Wedges looked I knew we’d need a couple dip options to try.
Well you know how crazy it can be when grocery shopping with kids. So when I was in the freezer aisle getting the McCain Dip’n Wedges I needed for game night I didn’t spend much time looking at the package. Sure, I verified that I had the right variety of McCains and also noticed they were free of artificial colors or flavors, but that was about all I was paying attention to. I was so surprised when I was pouring them out onto my baking sheet to find they were crafted with the most nifty little V shape I had ever seen…actually I had never seen anything like that in a potato fry. Turns out they are one of a kind and the only v-cut shape on the marketplace.
So how did they hold up? Umm amazing! My husband picked one up, looked at it and stated that they looked quite interesting. But he soon exclaimed “Whoa” when he used a McCain Dip’n Wedge to get a nice hardy scoop of Ranch Loaded Potato Skillet Dip…and the potato wedge held up to all the weight of his giant size scoop! The boys loved them as well with one asking for ketchup (no surprise there) and the other willingly trying the three dips.
Next time you are looking to switch up your snacks for family game night be sure to pick up a bag of McCain Dip’n Wedges found in your local grocers freezer. Just the fact they are freezer friendly makes this a snack I’ll be sure to keep stocked in our house. Perfect for game night, a last minute friend gathering or after school snack with the neighbor kids; these fries were meant to be shared.
Ranch Loaded Potato Skillet Dip
5-6 slices bacon, cooked and crumbled (about ½ cup total)
1 cup sour cream
1 – 8 oz package cream cheese, softened
2 cups shredded sharp cheddar cheese (reserve ½ cup for top)
1 TBSP ranch seasoning mix
1 TBSP minced fresh chives
Preheat oven to 350. In a mixing bowl combine cooked bacon, sour cream, cream cheese, 1 ½ cups shredded cheddar, ranch seasoning and chives. Mix until well incorporated. Spread into a small cast iron skillet (I think mines is about 7.5”). Top with reserved ½ cup shredded cheese and bake 25-30 minutes until top is bubble and golden.
Honey Chipotle Dip
¼ cup mayonnaise
¼ cup sour cream
2 tsp honey
½ tsp chipotle chili powder
optional: squeeze of fresh lime
Combine all the ingredients in a small bowl and stir until all combined. Store in the refrigerator before serving. Best if made a few hours in advance to let all the flavors meld together.
Ranch Chive Dip
¼ cup mayonnaise
¼ cup sour cream
1 TBSP ranch seasoning mix
2 tsp fresh minced chives
Combine all ingredients in a small bowl and stir until well mixed. Refrigerate for a couple hours before serving.
