Tonight I was getting ready to make dinner when I realized I had no rolls. Dinner in our house just needs bread of some sort (I love bread and could eat it with every meal!). Thank goodness for my mom's Easy Cornbread recipe! I just love this recipe. I always have the ingredients on hand, it takes literally 5 minutes to mix together, I can make it into muffins, in a 9″ pan or a cast iron skillet. It truly is an amazing recipe.
Easy Cornbread

From the Family of: Mom H
Yields: 1 dozen muffins or a 9 inch pan or a medium skillet
Cook Time: 20-25 minutes
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup oil (vegetable or canola)
1 egg
Instructions:
1. Preheat oven to 400 degrees.
2. Combine all ingredients and mix with a wooden spoon until well mixed.
3. Pour into a greased 9 inch pan or cast iron skillet. Can also make a dozen muffins.
4. Bake for 20-25 minutes for bread, or 18-20 minutes for muffins, or until golden brown and a toothpick comes out clean.
5. Serve with butter and lots of honey
