I spent the afternoon in my daddy’s garden. I love his garden. It isn’t a perfectly manicured garden with perfect wood box raised garden beds and perfect mulched walkways. Instead the raised beds are free standing with the vines of pumpkins and summer squash spilling onto the paths between the beds. To the two of us it is paradise. We had fun together creating a short video on how to grow beans which I will upload & write about soon. But this evening I had a bit of quiet in the house after my son went to sleep nice and early. So I used that time to prep and blanch my green beans!
I’ve included a how to video which shows and describes how to prepare and blanch green beans for freezing. I have also outlined the steps below!
How to Blanch Green Beans
1. Boil water in a medium sized sauce pan.
2. While water is boiling wash & snap (or cut ends off) green beans. Prepare your ice bath. I use a large bowl and fill with equal parts water and ice.
3. Put green beans in the boiling water and boil for exactly 90 seconds.
4. As soon as the timer goes off immediately transfer the beans to the ice bath to stop the cooking. I use a wok strainer…basically a spoon that is a sieve.
5. You will notice that the beans cool down very quickly. Transfer the cooled beans to quart sized freezer bags. Date and label the bags and put in the freezer.
6. In our house we freeze the beans for about 1 year…if they last that long!
