I love pink. Even being a wife and mommy to 2 boys (well 2 come May), I am girly girly girly. Usually when I’m baking I’m decorating football cookies, using blue and green sprinkles, etc. But every once in a while mommy needs a girly treat. So after making my favorite homemade fettucine fresh pasta recipe which only calls for egg yolks I knew exactly what I’d make with the leftover egg whites: Swiss Meringues in the softest shade of pink.
I love meringues. While my boys will eat them it is definitely a mommy cookie in our house and I’ll probably actually get the chance to eat more of them then if they were say chocolate chip cookies! They are easy to make, perfect for using up leftover egg whites, only require 4 ingredients and are just dainty and oh so pretty!
Swiss Meringues are a little different then regular meringues or French Meringues. Before beating the egg whites you dissolve the sugar into the egg whites over a double boiler (like when making Swiss Meringue Buttercream). This results in a meringue that can easily be piped and baked into crisp, delicate confections!


- 4 large egg whites
- 1 cup sugar
- 1/8 tsp cream of tartar
- 1 teaspoon vanilla extract
- food color if desired
- Bring a medium saucepan of water to a simmer. Preheat oven to 175 degrees.
- In a metal bowl (I use my Kitchenaid bowl), combine the egg whites, sugar and cream of tartar. Place the bowl over the simmering water and stir constantly until the sugar has dissolved. This usually takes about 3-4 minutes. You can test to see if the sugar has dissolved by rubbing a bit of the egg whites/sugar between your fingers...it shouldn't feel gritty.
- Remove bowl from the heat and with the whisk attachment beat on low speed for 2 minutes. Increase to high speed and beat until stiff peaks. The meringue will be very glossy and will hold its shape (about 10 minutes of beating total). Add the vanilla extract and food coloring and beat until combined.
- Transfer to a large pastry bag fitted with a large star tip. Pipe 2 1/2" diameter meringues onto a parchment lined baking sheet. You should get about 24 depending on how large you pipe them.
- Bake at 175 degrees for 2 1/2 - 3 hours (again, depending on size of meringues). I usually sacrifice a meringue after 2 1/2 hours by breaking it open...it should be dried throughout. Keep adding 15 minutes to baking time until meringues are completely dried.
- The last batch I made took 2 1/2 hours to dry. After the time was up I turned my oven off and let them completely cool in the oven.
- This recipe probably isn't the best to be made on a humid day....they will take forever to dry!
