Ready in under 20 minutes it’s the perfect summer dessert recipe to serve during strawberry season! These also make the perfect gift! Place two in a wooden berry basket, add a handful of fresh berries, tie with coordinating ribbon and give!

Strawberry Shortcake Biscuits
Ingredients
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/4 cup sugar
- 4 TBSP butter chilled and cut into small pieces
- 3/4 cup buttermilk
Instructions

Combine dry ingredients (flour, baking powder, baking soda, salt and sugar) in your mixing bowl. Using a pastry blender (or your fingers, two forks...whatever you have to get the job done), cut in the butter into your dry ingredients. You want to cut it in until it resembles coarse crumbs.

Once the butter is all cut in, add the buttermilk and mix until just starting to combine. You don't want to over mix it or you'll have tough biscuits.

Dump your dough onto your work surface (this is when I love using my $12 pastry mat) and gently knead it till it all comes together. Pat it or roll it until it is about 1/2" thick. Using a 3" cutter, cut out your biscuits and place on a parchment lined baking sheet.

Bake at 425 for 10-11 minutes until bottoms are golden brown and they are just starting to brown on the edges.

Let cool and serve with fresh strawberries, whipped cream or ice cream!
