On the third day of Christmas my darling baked for me Great-aunt Gen’s Rice Krispie Cookies
These cookies are one of those true vintage cookie recipes from my great-aunt Gen. Great-aunt Gen was one of those people who would ask about you and your life and honestly care. She was a true lady, soft spoken, and was also known for her Rice Krispie Cookies. Yes, not treats…cookies. As in chewy and crunchy and sweet and delicious and melt in your mouth cookies. Not only are the cookies amazing but the dough is yummy too! And since it is egg free you can enjoy it guilt free (just don’t think about the cup of butter while enjoying)!
- 1 cup butter, softened
- 1 cup sugar (plus extra for dipping glass in)
- 1 tsp baking soda
- 1 tsp cream of tartar
- dash of salt (I do about 1/4 tsp when I use unsalted butter)
- 1 1/2 cup flour
- 2 cups Rice Krispies
- Preheat oven to 350 degrees
- Cream butter and sugar until light and fluffy.
- Add the rest of the ingredients except the Rice Krispies. Mix until combined and then fold in the Rice Krispies.
- Roll out teaspoon size balls of dough (I use my OXO Small Cookie Scoop. Place 2 inches apart on a cookie sheet (lined with parchment paperor Silpat). Dip a glass in sugar (you may need to wet glass the first time to get the sugar to stick) and then press each cookie until evenly flattened.
- Bake at 350 degrees for 7-8 minutes until lightly golden around the edges but still soft and chewy.
